Ingredients

The ingredients are:
  • 6 pounds St. Louis Style Pork Spareribs (3 racks)
  • Rub
  • 3 tablespoon light brown sugar
  • 2 tablespoons salt
  • 2 tablespoon ground coriander
  • 1 tablespoon coarsely ground black pepper
  • 1 tablespoon ground cumin
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • Pineapple Jalapeno Sauce
  • 2 cups pineapple juice
  • 1/2 cup apple cider vinegar
  • 2 tablespoon brown sugar
  • 1/4 cup butter
  • 1 - 2 jalapenos, thinly sliced
  • 3/4 teaspoon coarsely ground black pepper

How to Make

  • Step 1: In a large bowl, combine rub ingredients. Rub mixture all over ribs, cover and refrigerate up to 24 hours.

  • Step 2: In a saucepan, combine sauce ingredients. Bring to a boil, then simmer, stirring occasionally, until reduced and syrupy, 25 to 30 minutes.

  • Step 3: Heat grill to medium, 325°F to 350°F. Place ribs over direct heat and grill 10 to 15 minutes per side, tuning once.

  • Step 4: Transfer ribs to foil and brush with sauce. Loosely close the foil. Place ribs back on grill, turning off burners directly below, close lid and cook with indirect heat for approximately 90 minutes, until ribs are very tender and internal temperature reaches a minimum of 200°F. Cut ribs into portions to serve
