Step by Step Method

Step 1

Preheat a pie maker and use a 6.5 cm pastry cutter to cut a disc from each slice of brioche.

Step 2

Whisk together the eggs, sweetened condensed milk and vanilla in a shallow bowl until evenly combined.

Step 3

Soak half the brioche discs in the egg mixture for 1 minute each side. Lift out 1 at a time, letting excess mixture run back into the bowl and place 2 pieces in each hole of the pie maker and close lid and cook for 4 minutes or until golden and the egg has set.

Step 4

Repeat with remaining brioche discs and egg mixture and place French toast on a serving platter and drizzle over maple syrup and serve with ice-cream, if using.

  • Make sure to buy brioche bread that is soft and fresh.
  • If you don't have sweetened condensed milk, you can make your own by combining equal parts of white sugar and evaporated milk.

  • Replace the brioche bread with sourdough bread. This substitution will add a more subtle flavor to the French toast and give it a more rustic texture.
  • Replace the sweetened condensed milk with coconut milk. This substitution will add a hint of coconut flavor and make the French toast dairy-free.

Strawberry French Toast Replace the maple syrup with a strawberry sauce. To make the strawberry sauce, combine 1 cup of strawberries, 1 tablespoon of sugar, and 1 tablespoon of lemon juice in a small saucepan. Cook over medium-high heat until the strawberries have broken down and the sauce has thickened, about 5 minutes. Serve the French toast with the strawberry sauce and ice-cream.

Blueberry Compote - A sweet and tangy compote made with fresh or frozen blueberries and a hint of lemon juice. It pairs perfectly with the French toast and adds a delicious burst of flavor to the dish.

Maple Glazed Bacon: Crispy bacon glazed with maple syrup and a hint of smoked paprika. The sweet and smoky flavors of the bacon pair perfectly with the blueberry compote and the French toast for a delicious breakfast combination.
