Step by Step Method
Step 1
Stir together the rice vinegar, soy sauce, minced ginger and 1/4 cup water in a small pot.
Step 2
Bring to a low simmer and quickly stir in the bonito flakes; remove from heat and cool completely.
Step 3
In the meantime bring a large pot of water to a boil.
Step 4
Remove from heat and stir in the bean sprouts; cover and let sit for 2 minutes.
Step 5
Drain the sprouts, shaking off as much water as possible and toss with the rice vinegar and bonito mixture.
Step 6
Allow to rest about 15 minutes before serving.
