Step by Step Method
Step 1
Brown ground beef.
Step 2
Add onions, chilies, seasoning salt, pepper, oregano, cumin, garlic powder, chili powder to taste, stirring to keep meat crumbly.
Step 3
Combine meat with creamed corn, tomatoes w/green chiles, enchilada sauce, cheddar cheese, ripe olives, and diced green chiles.
Step 4
Tear 3 large flour tortillas into pieces and spread over the bottom on a pam sprayed 11x7x2 baking dish.
Step 5
Spread half the meat mixture over the tortillas. Tear remaining tortillas and spread over mixture. Top with remaining meat mixture.
Step 6
Sprinkle with Monterey jack cheese.
Step 7
Bake at 325F degrees for 30 minutes.
