Ingredients

The ingredients are:
  • 1 1/2 pounds ground beef
  • 1 cup onion, diced
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon oregano, dried
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cumin, ground
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 15 ounces corn, cream style (1 can)
  • 10 ounces tomatoes with green chiles, Rotel (1 can)
  • 4 ounces green chilies, diced (1 can)
  • 8 ounces enchilada sauce (1 can)
  • 8 ounces cheddar cheese, grated
  • 4 ounces black olives, ripe, sliced (1 can)
  • 6 ounces flour tortillas, burrito (6 )
  • 8 ounces Monterey jack cheese, grated

How to Make

  • Step 1: Brown ground beef.

  • Step 2: Add onions, chilies, seasoning salt, pepper, oregano, cumin, garlic powder, chili powder to taste, stirring to keep meat crumbly.

  • Step 3: Combine meat with creamed corn, tomatoes w/green chiles, enchilada sauce, cheddar cheese, ripe olives, and diced green chiles.

  • Step 4: Tear 3 large flour tortillas into pieces and spread over the bottom on a pam sprayed 11x7x2 baking dish.

  • Step 5: Spread half the meat mixture over the tortillas. Tear remaining tortillas and spread over mixture. Top with remaining meat mixture.

  • Step 6: Sprinkle with Monterey jack cheese.

  • Step 7: Bake at 325F degrees for 30 minutes.
