"The next time you want a perfect tender and juicy prime rib roast try this recipe - you won't be disappointed! Remember to take the roast out of the fridge a couple of hours before cooking. I didn't list the cooking time or servings, that's going to depend on the size of your prime rib. DO NOT USE A GLASS/PYREX PAN TO MAKE THIS ROAST! You say your oven doen't go up that high? then forget about making this roast and see my other prime rib recipe that is posted here"

Step by Step Method

Step 1

Remove the roast from the fridge 2 or more hours before cooking. Preheat oven to 550°F degrees. DO NOT USE A GLASS PAN FOR THIS!

Step 2

Make a rub of salt, pepper and garlic powder and apply to meat. Place meat in a shallow roasting pan fat side up. IMPORTANT! put some water in the bottom of the roasting pan before you start, it will keep the drippings from drying out and burning and smoking up your house.

Step 3

Roast uncovered at 550°F at 5 minutes per pound for RARE, or 6 minutes per pound for MEDIUM and 7 minutes per pound for WELL DONE.

Step 4

Turn off oven at the end of cooking time and DO NOT OPEN OVEN DOOR FOR TWO HOURS.

Step 5

At the end of the 2 hours, remove meat from oven to slice; it comes out perfect everytime.

I was so excited to try this recipe when I bought a beautiful prime rib roast. But, sadly this technique did not work for me. I had a 4.6 lb roast and cooked it in my gas oven at 550 degrees Fahrenheit for 28 minutes. I turned the oven off as directed and left it for 2 hours. When I took the roast out and cut into it it was blue rare. So disappointing. But, I did put it back in the oven at 350 degrees Fahrenheit for another hour and it came out very tasty and medium rare.

This is more a cooking method, but it worked perfectly for me doing 5 minutes per pound, for a perfectly cooked rare prime rib. I added rosemary and thyme along with salt, pepper, onion powder and garlic powder for added flavor. Delicious Valentine's dinner with my love!
