"This is a great way to make a delicious and really tender pork roast that will please the whole family! I have sprinkled lots of garlic powder all over the roast after adding the spices and it tastes really good too. Feel free to change up the herbs to suit your taste. Great for Sunday dinner, when you have company, or anytime you feel like having a delicious meal!"

Step by Step Method

Step 1

Preheat oven to 450 degrees F. Move top oven rack to center of oven.

Step 2

To Prepare Spice Rub: Combine rosemary, basil, salt and pepper in a small bowl. Add olive oil, and stir to mix well. Warm rub in microwave for 15-30 seconds to help infuse oil with spices, Alternately you can allow rub to sit for a few minutes to marry the oil with the spices.

Step 3

Remove the rack from the roasting pan and place on counter top. Place the roast with the fat pad on the top side (do not cut this off, it will impart a lot of flavor into the roast and help it stay moist) on the rack and spoon spice mixture on top of the roast.

Step 4

Rub spice mixture all over the top, sides and bottom of the roast.

Step 5

Place rack back in roasting pan, and bake in oven for 10 minutes, reduce temperature to 250 degrees F, and bake for 60-90 minutes (time will vary depending on whether you have a short fat roast or a thin long roast). The roast needs to reach 145° internal temperature.

Step 6

Remove roast from oven, place on cutting board with tongs (do not puncture the roast), and allow to rest for 5 minutes so the juices and disperse into the roast (and not all over your cutting board).

Step 7

Carve roast and serve.

I did take some liberty with this recipe. I used 1/2 pork tenderloin and because of the size I baked it at 375 for 25 minutes - It was perfect. Next time I will do a proper roast and do the slow baking. Lovely flavor from the herbs. Thanks Linda for yet another lovely recipe

A perfectly seasoned pork loin roast, have always thought rosemary and pork are meant for each other. Tender and packed with flavor making a wonderful meal.So a repeatable!
