Step by Step Method
Step 1
Preheat oven to 350-degrees F.
Step 2
Place coconut and pecans on a 15 x 10 x 1-inch baking pan. Bake for 6 - 8 minutes or until toasted, stirring every 2 minutes. Set aside to cool.
Step 3
In a large bowl, cream butter and sugars until light and fluffy, 5 - 7 minutes. Add eggs and vanilla; beat well. In another bowl, combine the flour, baking soda and salt. Add to creamed mixture; beat well. Stir in the oats, chocolate chips and toasted coconut and pecans.
Step 4
Drop by rounded teaspoonfuls onto greased baking sheets. Bake at 350-degrees F until browned, about 12 minutes. Remove to wire racks to cool.
Step 5
Makes about 6 dozen.
