Step 1
Wash and peel potatoes and cut into thin slices.
Step 2
Chop onions, green peppers, and garlic.
Step 3
In a large skillet add olive oil and cook the potatoes over low heat until they begin to soften. Keep moving the potatoes carefully so they don't fry.
Step 4
When potatoes begin to soften, add the green peppers, onions and garlic.
Step 5
Continue cooking until the potatoes, peppers and onions are all very soft.
Step 6
Drain the excess olive oil, if necessary.
Step 7
Add salt and pepper to taste.
