Grease a 19cm x 30xm lamington pan and line base and sides with baking paper, extending paper 5cm about pan edges.
Beat butter and sugar in a large bowl of an electric mixer until light and fluffy and then add flour and coconut and beat until just combined.
Press over the base of the prepared pan and smooth over top and cook in a moderate oven (180C) for about 20 minutes or until lightly golden and then remove and cool in the pan.
Reduce oven to moderately slow (160C).
To make the topping whisk eggs and sugar in a large bowl until combined and then whisk in pulp, rind and juice and then add flour and whisk until smooth.
Pour over base and return slice to oven and cook for about 50 to 55 minutes or until topping is just set.
Transfer pan to a wire rack and cool completely in pan and once cooled lift the slice out of the pan and cut into bars and dust with sifted icing sugar.
