Step 1: Grease a 19cm x 30xm lamington pan and line base and sides with baking paper, extending paper 5cm about pan edges.
Step 2: Beat butter and sugar in a large bowl of an electric mixer until light and fluffy and then add flour and coconut and beat until just combined.
Step 3: Press over the base of the prepared pan and smooth over top and cook in a moderate oven (180C) for about 20 minutes or until lightly golden and then remove and cool in the pan.
Step 4: Reduce oven to moderately slow (160C).
Step 5: To make the topping whisk eggs and sugar in a large bowl until combined and then whisk in pulp, rind and juice and then add flour and whisk until smooth.
Step 6: Pour over base and return slice to oven and cook for about 50 to 55 minutes or until topping is just set.
Step 7: Transfer pan to a wire rack and cool completely in pan and once cooled lift the slice out of the pan and cut into bars and dust with sifted icing sugar.
