Step by Step Method

Step 1

Brown the beef and onions.

Step 2

Add bell peppers, carrots, tomato and beef broth.

Step 3

Let cook down until almost dry.

Step 4

Season to taste.

Step 5

Pam spray a 9x13 casserole.

Step 6

Preheat oven to 375 degrees F.

Step 7

Mix potato ingredients and pour 1/2 in the bottom of the casserole.

Step 8

Spread beef mixture on top.

Step 9

Sprinkle eggs and olives on top.

Step 10

Put rest of the potatoes on top and make wavey lines with a fork to help brown.

Step 11

Bake in oven 30 minutes until browned and bubbly.
