  • 1 bay leaf
  • 3 eggs, hard boiled, chopped
  • 1/4 cup green olives, sliced
  • Potatoes
  • 4 cups mashed potatoes
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon nutmeg
  • 4 tablespoons butter
  • 4 ounces mozzarella cheese, shredded

How to Make

  • Step 1: Brown the beef and onions.

  • Step 2: Add bell peppers, carrots, tomato and beef broth.

  • Step 3: Let cook down until almost dry.

  • Step 4: Season to taste.

  • Step 5: Pam spray a 9x13 casserole.

  • Step 6: Preheat oven to 375 degrees F.

  • Step 7: Mix potato ingredients and pour 1/2 in the bottom of the casserole.

  • Step 8: Spread beef mixture on top.

  • Step 9: Sprinkle eggs and olives on top.

  • Step 10: Put rest of the potatoes on top and make wavey lines with a fork to help brown.

  • Step 11: Bake in oven 30 minutes until browned and bubbly.
