Step by Step Method

Step 1

Combine the panko and seasonings. Roll scallops in the mixture.

Step 2

Heat olive oil and butter in a large skillet until very hot, and foam subsides.

Step 3

Add scallops, turning once until browned on both sides, about 3-4 minutes. Remove from heat.

Step 4

Quarter the lemon and squeeze some juice over the scallops. Serve with extra lemon.

What a delight! So easy, quick - plus so tasty. I love old bay spice just a subtle added flavour. Do not over cook- 2 minutes each side - that's all!. Cheers Bergy

What a wonderful taste and texture combination these are -- creamy and slightly sweet on the inside and crisp on the outside. We let the scallops come to room temperature and patted them dry before adding the panko coating so everything came together quickly in the pan. The fresh lemon added an excellent finish.
