"This is another super-easy & company-worthy way to prepare a main entree when you entertain guests or celebrate a special occasion w/your significant other. As a general rule, I prefer make-ahead options when I plan such a menu. It's just far less stressful & time efficient. However, this recipe found @ realsimpledotcom made me rethink the whole idea of menu planning. Starters, sides & dessert are much easier "make ahead challenges" anyway & this stellar recipe can easily be prepared after a starter has been enjoyed & wine glasses refilled. I liked it a lot & hope you will feel the same way. ENJOY!"

Step by Step Method

Step 1

Heat the oil in a lrg skillet over med-high heat.

Step 2

Season steak w/salt & pepper as desired & cook to desired doneness (2-3 min per side for med-rare). Remove steak from the pan & allow it to rest at least 5 min before slicing (See NOTE below).

Step 3

Remove the skillet from heat & carefully add the cognac, stirring to incorporate the meat juices. Return pan to the heat & cook (stirring occ) until slightly thickened (2-3 min). Add the cream & cook until thickened (2-3 min more).

Step 4

*NOTE: In all honesty, the steak was a part of this recipe, but for me was merely a way to get to the cognac sauce. That said, feel free to season or marinate the steak to suit your preferences B4 pan-grilling it on the stovetop & then finish the recipe as directed.
