Step by Step Method

Step 1

Preheat the oven to 350F.

Step 2

Mix the first six ingredients together - mix very well and shape into a loaf pan.

Step 3

Mix the next ingredients together- poke holes, with a fork, in the meatloaf-spread the sauce on top.

Step 4

Bake for 1 hour.

I scaled it to use 1lb of heart smart mince but left all the other ingredients the same as there was only 3 of us I had 1 serve left over which the DS had the next day on his sandwich. I personally found the sauce component a little too sweet but the DM and DS absolutely loved it. I baked it for 45 minutes at 175C fan forced and could have got away with 40 minutes. I left out the salt and didn't need it. We love meatloaf and I see many repeats cause this is soooo good!
