Step by Step Method
In a small bowl, whisk eggs until well blended.
Melt half of the butter in a small skillet; don't let it burn.
Add potatoes and onion and cook 5-8 minutes, or until onions begin to soften.
Add sausage and cook until heated through.
Add zucchini and remaining butter. Stir in whisked eggs.
Stir frequently to scramble eggs fluffy. Remove from heat.
Stir in grated cheese. Add salt and spices/herbs of your choice to taste.
Divide between two plates and serve with buttered toast and melon slices, if desired.
