Step 1: In a small bowl, whisk eggs until well blended.
Step 2: Melt half of the butter in a small skillet; don't let it burn.
Step 3: Add potatoes and onion and cook 5-8 minutes, or until onions begin to soften.
Step 4: Add sausage and cook until heated through.
Step 5: Add zucchini and remaining butter. Stir in whisked eggs.
Step 6: Stir frequently to scramble eggs fluffy. Remove from heat.
Step 7: Stir in grated cheese. Add salt and spices/herbs of your choice to taste.
Step 8: Divide between two plates and serve with buttered toast and melon slices, if desired.
