  • 2 ounces yellow onion, diced (1/4 onion)
  • 7 ounce zucchini, chopped (1 small zucchini)
  • 4 ounces cooked sausage (Polska kielbasa links, cut into small pieces)
  • 3 large eggs
  • 1/8 cup butter, divided
  • 1/4 cup grated Parmesan cheese
  • Salt, to taste
  • Pepper, to taste
  • Chili powder, to taste
  • Fresh herbs, to taste

How to Make

  • Step 1: In a small bowl, whisk eggs until well blended.

  • Step 2: Melt half of the butter in a small skillet; don't let it burn.

  • Step 3: Add potatoes and onion and cook 5-8 minutes, or until onions begin to soften.

  • Step 4: Add sausage and cook until heated through.

  • Step 5: Add zucchini and remaining butter. Stir in whisked eggs.

  • Step 6: Stir frequently to scramble eggs fluffy. Remove from heat.

  • Step 7: Stir in grated cheese. Add salt and spices/herbs of your choice to taste.

  • Step 8: Divide between two plates and serve with buttered toast and melon slices, if desired.
