Step by Step Method

Step 1

In a medium-size heavy saucepan, combine condensed milk, coconut flakes, butter and egg yolks over medium-low heat. Stir constantly with a wooden spoon until the mixture is thick and you can see the bottom of the saucepan when you drag the spoon across the bottom. About 20 minutes.

Step 2

Remove from heat immediately and pour into a shallow buttered dish. Let cool to room temperature. To make rolling easier, you can refrigerate the mixture.

Step 3

Lightly butter your palms, scoop out the mixture with a teaspoon and roll it into a round but slightly elongated shape. Roll in sugar and set aside.

Step 4

Take a prune and cut a slit lengthwise, but not all the way through. You just want to make room for the coconut filling. Repeat with remaining prunes.

Step 5

Holding a prune, insert the rolled coconut in the opening, being careful to make a good seal between the coconut and the prune. Roll in sugar and set on a plate. Repeat with remaining prunes.

Step 6

If you'd like, you can place each candy in small paper candy cups.
