"So here's the thing, something about the word "umami", kind-of-annoys me. I don't know why....maybe because it's the new buzzzz word that many TV chefs are using that'll go away in a New York minute? Maybe because it's a fad word? Maybe it makes them sound pretentious? I dunno. I need to get over it, seriously! However, I totally love foods that have that, dare I say it....UMAMI flavor. I said it, I said it... In any case these burgers are all about "umami", but I decided to call it "Oh Mommy" instead of its original name, containing, yep, "umami". Besides, it's this "mommy" who will be making them..I like that much better. Thank you."

Oh Mommy Ketchup


Step 1

Mix all ketchup ingredients together and blend well. Set aside to let flavors meld.

Oh Mommy Burgers


Step 2

Place beef, fish sauce, garlic, onion, and sugar in a medium bowl.

Step 3

In a small bowl, combine bread cubes and milk. Mix together until bread is uniformly moist. Add to beef, with the egg.

Step 4

Add half of the Oh Mommy ketchup to the beef. Mix everything together gently, but thoroughly. Cover bowl with plastic and chill for at least 30 minutes.

Step 5

Form 4 to 6 equal-sized patties (about 4 to 6 ounces each). Don’t pack the meat, or handle it too much. Use a light hand for the best juicy burger results. Chill the patties until you are ready to cook.

Step 6

Heat a non-stick pan to medium-low. Cook burgers for 4 minutes per side, or to desired doneness.

Step 7

Turn heat down to low. Top burgers with cheese of your choice. Cover pan for a minute, or until cheese begins to melt.

Step 8

Build your burger! Place watercress on bottom bun. Top with burger. Generously slather Oh Mommy ketchup over. Serve with potato chips, onion rings, French fries, or whatever you want.
