Step by Step Method

Step 1

Preheat oven to 375 degrees Fahrenheit.

Step 2

Combine potatoes, water, garlic and salt in a pan over high heat.

Step 3

Bring to a boil.

Step 4

Reduce heat to medium and cook until potatoes are tender, about 10 minutes.

Step 5

Drain potatoes and place in a bowl. Discard garlic.

Step 6

Add milk, butter and white pepper.

Step 7

Mash well.

Step 8

Add sausage, green onions and butter and mix well.

Step 9

Spread mixture into a large well-greased oval casserole.

Step 10

With the back of a large, moistened spoon, make 4 deep depressions in mixture.

Step 11

Break an egg carefully into each depression.

Step 12

Bake on middle rack of oven for 20 minutes.

Step 13

Sprinkle with grated Swiss cheese.

Step 14

Bake until egg whites are firm, about 3 to 5 minutes more.

Step 15

Sprinkle with chopped parsley and serve.
