Step 1

Place all ingredients in a blender, blend until smooth

Step 2

Spray a frypan with veggie spray, pour batter into frypan making two large cakes or 4 small cakes.

Step 3

Cook until bubbles appear around the edges and the edges look dry, flip and cook the other side.

Step 4

Serve hot with margarine and lemon or syrup or jam or freeze and reheat in a toaster

Eating these made me feel less guilty about eating pancakes. We loved them. They were fluffy and light compared to some I have had. I added in little chunks of strawberries, and made a strawberry sauce to pour over the top. A very nice brunch item!
