Step by Step Method
Preheat oven to 350 F
Spray an 8-inch pie plate with a non-stick cooking spray.
Beat the egg whites, sugar, vanilla, and baking powder until smooth and fluffy.
Beat in the flour until smooth and well blended.
Stir in the apples.
Pour into the pie plate and bake for 30 minutes.
The pie will puff up as it cooks, then collapse as it cools.

Is to beat the egg whites, sugar, vanilla separately for at least 1 1/2 minutes.
Mix the baking powder with the flour.
Add 1/2 cup chopped walnuts and 1/2 tsp. cinnamon.
It turns out great every time. serve it warm with French vanilla ice cream or whipped cream.
