Step by Step Method

Step 1

Place potatoes into a large saucepan of water, cover and bring to the boil. Reduce heat and gently boil, uncovered, for 8-10 minutes - ONLY - until just tender - remove from heat and then drain, refresh in cold water and halve potatoes lengthways and set aside.

Step 2

Heat the oil in a large non-stick frying pan over medium-high heat and add the potatoes and cook, turning occasionally, for 5–6 minutes until golden. Add the green onions, garlic, lemon juice and add half the chopped parsley and season with pepper to taste and gently toss to combine.

Step 3

Spoon into a serving bowl, sprinkle with remaining parsley and serve with lemon wedges.

Great potatoes! We used 3 baking potatoes but otherwise followed the directions as written but just cooking a bit longer. These were enjoyed by all. Thanks for sharing

These are great tasting potatoes I will be making often. I used avocado oil in lieu of the olive oil as that it what I had on hand and chopped up 1/4 cup of fresh parsley as this was not listed in the ingredients but was noted in instructions.

We will be making these potatoes again! Loved the crispy edges and how tender they were when we cut them in half. I did use less oil, minced garlic and a bit more lemon juice. Easy to make and fantastic flavor. Served with grilled pork chops for me and steak for the hubby. Made and reviewed for the "Pick Me" recipe tag game.

This was the highlight of our dinner tonight...Tisme...I do see why you cut back on the oil...I wish I had done the same...but these came out so nice and crisp...we loved the all the flavors...thanks for sharing your recipe...
