"It's almost time for new potatoes and I found a couple recipes that I combined to be ready for the first crop of the year!!"
Place the potatoes in a large pot, cover with water and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes. Drain and allow to cool and then cut the potatoes in half.
Combine the vinegar and mustard in a large bowl. Slowly whisk in the olive oil.
Add the potatoes to the vinaigrette, and mix gently but thoroughly. Toss in the scallions, capers, bacon bits parsley and dill. Taste to adjust salt and pepper.
