Ingredients

The ingredients are:
  • 3 pounds potatoes (red new potatoes or fingerling potatoes)
  • 3 tablespoons red wine vinegar
  • 1 1/2 tablespoons Dijon mustard (whole grain)
  • 3 tablespoons olive oil
  • 6 scallions, chopped
  • 1 tablespoon capers
  • 1 ounce cooked bacon (crumbled, I use 1 tablespoon real bacon bits)
  • 2 tablespoons chopped parsley
  • 2 tablespoon chopped fresh dill (use less if dried)
  • Salt and pepper, to taste

How to Make

  • Step 1: Place the potatoes in a large pot, cover with water and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes. Drain and allow to cool and then cut the potatoes in half.

  • Step 2: Combine the vinegar and mustard in a large bowl. Slowly whisk in the olive oil.

  • Step 3: Add the potatoes to the vinaigrette, and mix gently but thoroughly. Toss in the scallions, capers, bacon bits parsley and dill. Taste to adjust salt and pepper.
