Step by Step Method

Step 1

Place the potatoes in a large pot, cover with water and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes. Drain and allow to cool and then cut the potatoes in half.

Step 2

Combine the vinegar and mustard in a large bowl. Slowly whisk in the olive oil.

Step 3

Add the potatoes to the vinaigrette, and mix gently but thoroughly. Toss in the scallions, capers, bacon bits parsley and dill. Taste to adjust salt and pepper.

What a tasty potato salad...I used fingerling red and white potatoes...this has a nice tang to it..we really enjoyed the burst of capers and the crunch of the bacon...I cut the recipe in half and there was plenty for 4 servings...I served them with bratwurst and my bacon/green bean salad...made a delicious German meal...made for your week 1 football win...
