Step by Step Method

Step 1

Pour 1/4 cup of the olive oil into a large, wide saucepan and set over medium-high heat. Add the shallot and garlic and saute for about 2 minutes, until they just begin to turn brown. Add the mushrooms and stir to evenly coat with the oil. Add the wine, vinegar, 2 tablespoons of the lemon juice, the bay leaves, and thyme. Turn up the heat to high, cover the pan, and cook for 2 minutes, until the mushrooms release their moisture. Remove the pan lid, season with the salt and pepper, and continue to saute for about 5 minutes, until the liquid is evaporated and the mushrooms are tender. Remove the pan from the heat and let the mushrooms cool in the pan.

Step 2

When cool, stir in the remaining 1 tablespoon of olive oil and 1/2 tablespoon of lemon juice,and stir in the parsley.

Step 3

Serve them warm with roasted meats, steaks, burgers, fish, in an omelet, and with bbq'd food. Serve it cold as part of an antipasto, with a salad, etc.

NOTE: This recipe works best with button mushrooms as they will not break down or become too mushy after cooking.

Not the prettiest side on the plate, but so very tasty! I made as per the recipe although as my Button Mushroom's were a little larger than they usually are, I halved the recipe, which gave 3 very happy diners a tasty and decent serving each. We all really did enjoy these, they were cooked perfectly and had such a lovely flavor. DD and myself enjoyed these with some veggies and the family carnivore the DH enjoyed his with chicken. I am wanting to get some smaller ones and try this over Summer and serve them cold with salads, I think they will be just as amazing!
