Step 1

Place beans in a pot then add water to cover by 3-inches; bring to a boil then boil for about 5 minutes then remove from the heat, cover and let stand for 2 to 4 hours or until beans are softened.

Step 2

Drain and rinse beans, discarding liquid.

Step 3

In a large pot or Dutch oven heat oil over medium-high heat(use enough oil to coat the bottom of the pot) add in onions and celery; cook until tender (about 3-4 minutes).

Step 4

Add in garlic, dried thyme and cayenne; cook for 2 minutes.

Step 5

Stir in the beans, broth, water, potato flakes or mashed potato, Worcestershire sauce, seasoned salt, black pepper and bay leaves, then add in the ham bone; bring to a boil then reduce heat, cover and simmer partially covered for about1-1/2 hours or until beans are tender.

Step 6

Discard bay leaves.

Step 7

Remove ham bone; and set aside until cool enough to handle, then remove ham from bone and cut into cubes.

Step 8

Discard bone. Return the chopped ham to soup and heat through.

The only ingredient I did not use was the celery and the only dried beans I were berloti which I soaked up over night and my plan was to cook the soup in the crock pot so my 1.1 kilogram ham hock went into the crock pot and topped with the drained beans and I cooked of the onion and spices and put them in the crock pot and then added 5 cups of chicken stock and 5 cups of water and turned on the crock pot and 4 hours later there is a lot of swearing because I forgot to turn it on at the power point so the plan was to turn it on and let it cook for 4 hours and then turn it off and give it another 4 hours to the next morning but I discovered 13 hours after I started the cook it was still on and I had forgot to turn it off. Ended up putting the soup in 2 cup containers (I got 5 filled containers and put 4 in the freezer and the 5th I had for lunch and it was delicious), thank you Kittencal made for Alphabet Tag Game at FF&F.
