Step 1

It was really fun trying these muffins. I have never used blue corn meal and wanted to try it. These are just slightly sweet which is just right. I love having the pcs of corn in them. Definitely a little different taste that just yellow corn meal. Thank you for broadening our tastes.

I've had blue cornmeal for some time trying to find a recipe to use it and this popped up. Loved the flavor of this moist, slightly sweet muffins. Very much different from regular corn muffins in a good way. Only thing I found was with the color was hard to tell when they were done or getting to dark, so just went by the time advised and all was good
