Step by Step Method
Step 1
In a large pot cook onion in 1 tablespoon of oil until tender.

Add potatoes, cauliflower, chicken broth and water.

Bring to a boil and cook until vegetables are tender.

Puree, stick blender works well.
Step 5
Season to taste with salt and pepper.

Add crumbled blue cheese and cream.
