Step 1: In a large pot cook onion in 1 tablespoon of oil until tender.
Step 2: Add potatoes, cauliflower, chicken broth and water.
Step 3: Bring to a boil and cook until vegetables are tender.
Step 4: Puree, stick blender works well.
Step 5: Season to taste with salt and pepper.
Step 6: Add crumbled blue cheese and cream.
Step 7: Reheat and enjoy!
