Step by Step Method
Step 1
In a large pot cook chopped onion in oil until soft, 4-6 minutes.
Step 2
Add 2 tablespoons red curry paste, cubed sqash and broth.
Step 3
Simmer until tender, 15-20 minutes.
Step 4
Puree.
Step 5
Add coconut milk and reheat.
Step 6
Stir in 2 tablespoons lime juice.
Step 7
Serve and drizzle with sweet chile-garlic sauce.
