  • 2 tablespoons oil or butter
  • 1 cup chopped onion

  • 1 butternut sqash, peeled and cubed
  • 4 cups low sodium chicken broth
  • 1 14 ounce tin coconut milk
  • 2 tablespoons lime juice
  • Asian sweet chili garlic sauce

How to Make

  • Step 1: In a large pot cook chopped onion in oil until soft, 4-6 minutes.

  • Step 2: Add 2 tablespoons red curry paste, cubed sqash and broth.

  • Step 3: Simmer until tender, 15-20 minutes.

  • Step 4: Puree.

  • Step 5: Add coconut milk and reheat.

  • Step 6: Stir in 2 tablespoons lime juice.

  • Step 7: Serve and drizzle with sweet chile-garlic sauce.
