Step 1: In a large pot cook chopped onion in oil until soft, 4-6 minutes.
Step 2: Add 2 tablespoons red curry paste, cubed sqash and broth.
Step 3: Simmer until tender, 15-20 minutes.
Step 4: Puree.
Step 5: Add coconut milk and reheat.
Step 6: Stir in 2 tablespoons lime juice.
Step 7: Serve and drizzle with sweet chile-garlic sauce.
Step 8: Delicious!
