My Apple Pie

Step by Step Method
Step 1
Preheat oven to 400 degrees Fahrenheit.
Step 2
Mix the sliced apples, brown sugar, granulated sugar, lemon juice, lemon rind, cinnamon, ginger, nutmeg, and allspice in a large bowl.
Step 3
Place one pie shell on the bottom of a deep dish pie pan and sprinkle the rolled oats evenly over the bottom shell.

Spoon in the apples and add the top shell. Roll the edges of the top shell under the edges of the bottom shell and pinch lightly to seal, with your thumb and index finger.

In a small bowl, whisk the egg and brush evenly over the top of the pie and edges.

Make a few slits in the top crust with a sharp knife.
Step 7
Place the pie on a baking sheet (to avoid messy spills in the oven) and place it on the middle rack in the preheated oven for 15 minutes, reduce the heat to 350 degrees Fahrenheit and cook for another 30 minutes.
Step 8
Take the pie out of the oven and allow it to cool for at least 2 hours before slicing it. This will allow for the filling to thicken and make slicing easier.
