"Mustikkapiirakka, is not a pie in the way that we are familiar with. Instead of a pastry crust, this pie is made with a yeast dough that can best be described as a sweet bread. Almost like a sweet pizza crust. This Finnish version of blueberry pie is delicious and a great way to show off those luscious blueberries grown locally here in Florida. U-Pick, here I come!"

Step by Step Method

Step 1

Preheat the oven to 390°F

Step 2

Beat the butter and sugar together until fluffy. Mix in the egg thoroughly, then sift the flour and baking powder into the bowl. Mix until a smooth batter forms.

Step 3

Spread the batter over the bottom and up the sides of a greased 10″ flan dish. Bake for 10 mins in the oven, then remove.

Step 4

Spread the blueberries on the crust. Whisk together the sour cream, sugar, eggs and vanilla until thoroughly combined. Pour over the blueberries.

Step 5

Bake for 30 minutes, then turn off the oven. Leave the pie in the oven until the surface firms up.

Step 6

Cool and serve with ice cream or whipped cream, if desired.
