Step 1: Preheat the oven to 390°F
Step 2: Beat the butter and sugar together until fluffy. Mix in the egg thoroughly, then sift the flour and baking powder into the bowl. Mix until a smooth batter forms.
Step 3: Spread the batter over the bottom and up the sides of a greased 10″ flan dish. Bake for 10 mins in the oven, then remove.
Step 4: Spread the blueberries on the crust. Whisk together the sour cream, sugar, eggs and vanilla until thoroughly combined. Pour over the blueberries.
Step 5: Bake for 30 minutes, then turn off the oven. Leave the pie in the oven until the surface firms up.
Step 6: Cool and serve with ice cream or whipped cream, if desired.
