  • 5 ounces butter, softened
  • 3/4 cup Demerara (or Muscovado sugar)
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • FOR FILLING
  • 14 ounces blueberries (or whatever berries you like!, 2 1/2 cups)
  • 1 cup sour cream (organic sour cream or full fat Greek yogurt)
  • 1/4 cup Demerara (or muscovado sugar)
  • 1 large egg
  • 1 teaspoon vanilla

How to Make

  • Step 1: Preheat the oven to 390°F

  • Step 2: Beat the butter and sugar together until fluffy. Mix in the egg thoroughly, then sift the flour and baking powder into the bowl. Mix until a smooth batter forms.

  • Step 3: Spread the batter over the bottom and up the sides of a greased 10″ flan dish. Bake for 10 mins in the oven, then remove.

  • Step 4: Spread the blueberries on the crust. Whisk together the sour cream, sugar, eggs and vanilla until thoroughly combined. Pour over the blueberries.

  • Step 5: Bake for 30 minutes, then turn off the oven. Leave the pie in the oven until the surface firms up.

  • Step 6: Cool and serve with ice cream or whipped cream, if desired.
