Preheat oven to 350°F.
In a large bowl, toss potatoes, oil and salt.
Line a large baking sheet with parchment paper and spread potatoes in a single layer; wash bowl.
Bake potatoes, turning once, until golden brown, about 30 minutes.
Transfer potatoes to bowl and sprinkle with mustard powder and pepper, toss to coat.

I love the flavor the mustard powder offers to the potato wedges, nice spicy tang. I cooked mine with the oil in an actifry cooker then tossed them with the salt mustard powder and pepper, deeeeeeeelish!
Great crispy fries with a delicate bite of heat. Made as directed but left the potatoes on the baking sheet and sifted the mustard over the potatoes and sprinkled with pepper and tossed.
