Step by Step Method
Step 1
Heat butter in saucepan over medium heat and saute onion. Meanwhile, peel and chop potatoes into 1/2" cubes.
Step 2
Add potatoes to saucepan, almost cover with water, cover and bring to a boil. Reduce heat to simmer and cook 20-25 minutes, or until potatoes are tender.
Step 3
Add milk and cook a few more minutes until heated through. Garnish with paprika and green onions.
Step 4
Note: I use the smaller portions of butter and salt, so my flavor relies on a whole sweet onion.
