Ingredients

The ingredients are:
  • 1/4 to 1/2 cup butter
  • 1/2 medium yellow onion (I use a large sweet onion)
  • 4 medium potatoes (about 7 ounces each)
  • 1/2 to 1 teaspoon kosher salt
  • 1/8 teaspoon fresh ground pepper
  • 1 pinch parsley
  • 1/2 cup milk
  • 2 tablespoons chopped green onions, for garnish

How to Make

  • Step 1: Heat butter in saucepan over medium heat and saute onion. Meanwhile, peel and chop potatoes into 1/2" cubes.

  • Step 2: Add potatoes to saucepan, almost cover with water, cover and bring to a boil. Reduce heat to simmer and cook 20-25 minutes, or until potatoes are tender.

  • Step 3: Add milk and cook a few more minutes until heated through. Garnish with paprika and green onions.

  • Step 4: Note: I use the smaller portions of butter and salt, so my flavor relies on a whole sweet onion.
