"Delicious, old-fashioned frosting, very elegant. It was my favorite as a child, since it tastes like marshmallows and is so fluffy. Mom always used this recipe for an 8" 3 layer white cake with lemon filling. If you plan to use this frosting for the filling too, increase the amount. Don't start on the frosting until your cake has cooled and is ready to be frosted."

Step by Step Method

Step 1

Put 1" of water in bottom of double-boiler and bring to a boil.

Step 2

Put frosting ingredients in top of double-boiler and place over boiling water.

Step 3

Stir with your finger until you can't stand the heat (about 2 minutes), then pour into mixer bowl.

Step 4

Add vanilla and beat until smooth. Continue to beat until opaque and peaks form (about 7 minutes).

Step 5

Frost cake immediately.

Tips


  • If you don't have a double boiler, you will need a round pyrex bowl that will fit over one of your saucepans, leaving plenty of room for an inch of water to boil. The bowl shouldn't rest all the way in the saucepan, just half-way or so.
