Ingredients

The ingredients are:
  • 3 large egg whites
  • 1/8 teaspoon cream of tartar
  • 3 tablespoons light corn syrup
  • 3/4 cup granulated sugar
  • 1/2 teaspoon vanilla

How to Make

  • Step 1: Put 1" of water in bottom of double-boiler and bring to a boil.

  • Step 2: Put frosting ingredients in top of double-boiler and place over boiling water.

  • Step 3: Stir with your finger until you can't stand the heat (about 2 minutes), then pour into mixer bowl.

  • Step 4: Add vanilla and beat until smooth. Continue to beat until opaque and peaks form (about 7 minutes).

  • Step 5: Frost cake immediately.


Tips & Variations

Don't forget the following tips and variations.
  • If you don't have a double boiler, you will need a round pyrex bowl that will fit over one of your saucepans, leaving plenty of room for an inch of water to boil. The bowl shouldn't rest all the way in the saucepan, just half-way or so.
