Step by Step Method

Preheat oven to 325F degrees. Place oven rack on lowest level) Prepare angel food cake mix according to instructions on the box. Place cupcake papers into muffin tins, fill 2/3 full with mixed angel food cake. Bake for approximately 20 to 30 minutes; remove when tops are golden and spongey when pressed, do not underbake. Place on cooling racks until completely cooled.

With a sharp knife make a cut in the top of each cupcake, being careful not to cut through the bottom. Place a heaping teaspoon full of jam in each cut, using jams or jellies of your choice. Fill a sifter with the icing sugar and sprinkle over cupcake tops.
