Step 1: Preheat oven to 325F degrees. Place oven rack on lowest level) Prepare angel food cake mix according to instructions on the box. Place cupcake papers into muffin tins, fill 2/3 full with mixed angel food cake. Bake for approximately 20 to 30 minutes; remove when tops are golden and spongey when pressed, do not underbake. Place on cooling racks until completely cooled.
Step 2: With a sharp knife make a cut in the top of each cupcake, being careful not to cut through the bottom. Place a heaping teaspoon full of jam in each cut, using jams or jellies of your choice. Fill a sifter with the icing sugar and sprinkle over cupcake tops.
