Step by Step Method
Step 1
In a saucepan over medium heat bring the milk, sugar and cornstarch to a boil.
Step 2
In a heatproof bowl whisk egg and yolks together until mixture is smooth and lightened in color. Very slowly pour hot milk over the egg mixture, whisking constantly. Pour mixture back into the saucepan and return to heat.
Step 3
Cook mixture, whisking constantly until thick (3-5 minutes). Remove from heat. Stir in bourbon, butter and chocolate sauce. Cool completely at room temperature.
Step 4
Pour mixture into pie shell and smooth top.
Step 5
In the bowl of an electric mixer, whip cream until soft peaks form. Add confectioners' sugar and mint extract and continue beating until medium peaks form. top pie with whipped cream.
Step 6
Chill for at least 4 hours. Garnish with chocolate curls, if desired.
