"These a a lovely treat to serve during the Christmas period, and also a really different way to use fruit mincemeat. You can use this in large muffin pans, but they will make less and take a little longer to cook."

Step by Step Method

Step 1

Preheat oven to 200°C/180°C fan. Place mini paper patty cases into 4 tins x 12-hole mini muffin pans.

Step 2

Sift the flour into a bowl and mix in sugar.

Step 3

In a small bowl, combine egg, oil, milk and fruit mince then fold into dry ingredients.

Step 4

Spoon just less than 1 tablespoon of mixture into each patty case and bake for 15 minutes, until well risen and golden.

Step 5

Serve warm or at room temperature, tie them in red bows or a tiny sprig of holly for a Christmas effect.
