Ingredients

  • 1 1/3 cup self-raising flour
  • 1/3 cup demerara sugar
  • 1 egg, lightly beaten
  • 1/2 cup rice bran oil
  • 1/3 cup milk
  • 1 1/2 cup fruit mince

How to Make

  • Step 1: Preheat oven to 200°C/180°C fan. Place mini paper patty cases into 4 tins x 12-hole mini muffin pans.

  • Step 2: Sift the flour into a bowl and mix in sugar.

  • Step 3: In a small bowl, combine egg, oil, milk and fruit mince then fold into dry ingredients.

  • Step 4: Spoon just less than 1 tablespoon of mixture into each patty case and bake for 15 minutes, until well risen and golden.

  • Step 5: Serve warm or at room temperature, tie them in red bows or a tiny sprig of holly for a Christmas effect.
