"A spicy little omelet to brighten up your mornings!"
Mix filling ingredients in small bowl, set aside.
Beat Omelet ingredients together, except Cheese.
Pour mixed ingredients into greased or non-stick skillet.
After egg mixture is mostly cooked through top with Cheese blend.
Transfer to plate, top 1/2 side of omelet with filling mixture. Fold over.
Top with salsa and sour cream (optional).
