  • When selecting a chipotle chili, pick one that is mild or medium depending on your desired spice level.
  • If you are not a fan of cilantro, you can substitute it with parsley or another herb of your choice.

  • Replace the cream with plain yogurt: This substitution will reduce the amount of fat and calories in the omelet, making it a healthier breakfast option.
  • Replace the Mexican cheese blend with feta cheese: This substitution will add a different flavor to the omelet, as feta cheese has a tangy, salty taste that can be a nice contrast to the other ingredients.

Vegetarian Version Replace the 3 large eggs with 3/4 cup of chickpea flour mixed with 1/4 cup of water and 1/4 teaspoon of baking powder. Omit the cream. Top with diced bell peppers, mushrooms, and black beans instead of the Mexican cheese blend.

Mexican Style Rice: This savory rice dish with a hint of lime and cilantro is the perfect accompaniment to the Mexican Style Omelet. The flavors of the rice will complement the spices and flavors of the omelet and provide a delicious and complete meal.

Mexican Style Beans: This hearty side dish is a great way to add protein and fiber to the meal. It is made with black beans, onion, garlic, cumin, and chili powder, and is sure to add a delicious Mexican flavor to the meal. The beans will provide a great balance to the savory omelet and the rice, making for a complete and satisfying meal.
