"Quick and easy to prepare. A simple week night meal. I'm not always a fan of package seasoning mixes, but for this I don't mind. Now, if you make your own 'Taco Seasoning' blend - even better. Serve with lime wedges, warm tortillas and sour cream."

Step by Step Method

Step 1

Chicken ... Add 1 teaspoon of the taco seasoning mix to the chicken in a small bowl and toss to combine. Cover and marinate at least 30 minutes up to 4 hours.

Step 2

Stir Fry ... To a large pan (non stick preferred if possible), add the oil and bring to medium high heat. Add the chicken and onion and cook 5-7 minutes until the chicken is 'mostly' cooked through and the onions are tender. Then add the garlic, corn, green chilies, roasted peppers and black beans, remaining taco seasoning and water. Mix well and bring to a light boil, cook just a minute and then reduce to a simmer. Cook 10 minutes to let the sauce thicken and all the flavors develop. Finish with the scallions.

Step 3

Serve ... You can serve this over rice if you like, but I prefer the tortillas. Whether you like yours crispy or just warm is up to you. I like to spray the tortillas with a olive oil or a non-stick spray and bake in a 425 degree oven a few minute to warm and lightly crisp up. But, you can just warm them up in the microwave wrapped in a damp paper towel as well. Garnish with cilantro if you want, sour cream and a lime wedge. You can top your tortilla almost like a tostada, break up the tortilla like chips, of stuff your tortilla almost like a taco. Either way is delicious. ENJOY!
